Night mechanical harvest cooling after gentle destemming and crushing
Soft pressing and selection of the best juices by tasting
Controlled fermentation temperature . Aging on fine lees
Minimal use of sulphites

TASTING
The color is glossy yellow glints.

In the nose reveals complex aromas of white peach , pear and pineapple.

Lively and fresh,  a persistent structure with flavours of candied lime and saltiness .

CELLARING PORTENTIAL
2 years in good storage conditions.
