NATURAL WINE

 

The grapes are selected and harvested at the optimal time for the production .

Alcoholic fermentation, with natural yeasts from the grapes themselves, takes place in stainless steel vats, each variety separately.

 

Once the fermentation is finished, the blend is made and put into 125 liter oak barrels, where the wine undergoes malolactic fermentation.

The wine rests in barrels for 6 months. This wine has not been filtered. It is a wine with minimal intervention in which only sulfites are added at the time of bottling.

 

It is an aromatically intense wine, the aroma of toast is present, just like the ripe fruit, the spices are intuited when smelling it.

In the mouth it is soft and not astringent, with a long and pleasant aftertaste.

The Winery

Gerard and Sara, the former from Les Pobles (Aiguamúrcia) and the latter from Rodonyà, in Tarragona, Catalonia.

Together they have formed a family and started a project: Estol Verd. They both have roots in the land, given that their families have always lived from agriculture, and now, after becoming producers, providing agricultural services and managing farms, have taken the step to try to contribute to the agricultural world our way of seeing things, without prejudice, they believe in cooperation between people and/or projects, with undertaking adventures that happen not only to be producers, but also to be producers and marketers.

Estol Verd is a project within the agricultural world that seeks to reconcile production, processing and marketing. Their principles based on sustainability: economic, social and ecological. With these principles, desire, will and perseverance they want to become responsible with the environment, the environment and people.
